Henry Aschauer

 Henry Aschauer is a Wisconsin-based entrepreneur and the founder of Forage Kitchen, a fast-casual restaurant concept launched on Madison’s State Street in 2015. He is also a co-founder of Roast Public House, a popular sandwich and craft beer restaurant. Henry graduated from the University of Wisconsin–Madison with a degree in Economics and began building food businesses rooted in quality, efficiency, and community connection. Under his leadership, Forage Kitchen has grown into a regional brand with multiple locations across Wisconsin and Illinois, known for its health-forward menu of salads, grain bowls, soups, and wraps made with locally sourced ingredients. Henry also expanded the brand with Forage Kombucha, which began in Forage restaurants and later entered retail distribution. His work reflects a focus on scalable food concepts that support local producers and meet growing demand for fresh, accessible meals.
